Zucchini Stirfry

Dear Adventure Avenue,

One of my favorite meals is Zucchini Stirfry. This one pan meal is super easy to make! This meal was given to my mom by my first (and fifth grade!) teacher.

The Zucchini Stirfry minus the sausage and pasta.

Ingredients:

  • 3-4 zucchinis
  • 1 white onion or 1/2 a sweet onion
  • 4 Chicken Apple Aidells sausage or 1 Polska Kielbasa Sausage
  • 1lb of bowtie pasta
  • Olive oil
  • Balsamic Vinegar
  • Parmesan Cheese (optional)

Steps

  1. Put pot of water on to boil pasta. Add pasta to boiling water, and cook as instructed
  2. Coin zucchinis and sausage and set aside. Cut up onion.
  3. Sauté sausage until cooked and set aside.
  4. Sauté zucchini and onions in olive oil until onions and zucchini are tender.
  5. Add in sausage and splash balsamic vinegar to taste.
  6. Combine drained, cooked pasta into the sautéed zucchini, onions, and sausage.
  7. Top with parmesan cheese (optional)

  • Sauté zucchini and onions in olive oil until onions and zucchini are tender.
  • Add in sausage and balsamic vinegar to taste.
  • Combine drained, cooked pasta into the sautéed zucchini, onions, and sausage.
  • Top with parmesan cheese (optional)
