Mom’s Easy Balsamic Pasta Salad

Dear Adventure Avenue,

My mom’s pasta salad is one of my favorite summer sides. A perfect potluck item to bring to a spring or summer potluck. This cold pasta dish has cheese in it for a bit of protein. Sometimes I will even eat this as my main meal!

Ingredients

  • 1 box of pasta (bow tie is best; 1lb)
  • 1 bottle of Newman’s Own Balsamic Vinaigrette Dressing
  • 1 small container of cherry tomatoes
  • 12oz Quartered Artichoke hearts
  • Cheddar cheese (buy a block and cut it up into cubes if you can’t find cubes or to save money 8oz block should be plenty)
  • 1 small onion chopped (we usually use a white or half sweet onion but you could use a red one)

Instructions

  1. Cook pasta as instructed
  2. Cut up cheese cubes and dice up onion
  3. Drain pasta and put into bowl
  4. Add balsamic dressing so pasta doesn’t stick together
  5. Add artichoke hearts and onions to taste
  6. Wait until pasta is cool to add cheese and cherry tomatoes
  7. Add additional dressing once you serve it

  • 1 box of pasta bow tie is best (1lb)
  • 1 Container of cherry tomatoes
  • 12 ounces quartered artichoke hearts
  • 1 block of cheddar cheese cube the cheddar cheese
  • 1 small onion Dice an onion – we usually use white or half a sweet onion, but you could also use a red onion

  • Drain pasta and put into bowl
